Immunity Boost

Kids are getting back to school, fall sports are starting back up, there's talk of Halloween costumes, and basically it's almost Christmas. Anyone else feeling that way? That slower summer pace is officially in the rear view at this point, and all the more reason to boost your nutrition and immune system as new germs start flying around as the weather changes.

As tempting as it is to run out the door with just a cup of coffee, make a point to start your day with a nutritional powerhouse, even if it's to go. Another way to save time on busy mornings? Prep your smoothies ahead of time, portion out into ziplock bags and freeze! No chopping or dicing necessary in the midst of packing lunches, finding shoes, and finishing homework last minute. This Immune Booster Sweet Green Smoothie is perfect for this time of year, with a huge boost of vitamin C, calcium, antioxidants, fiber and folate to keep your family on track and keep colds at bay.

Immune Booster Smoothie

Ingredients

  • 1 cup roughly chopped spinach and kale, packed tightly
  • 1½ cups unsweetened almond, coconut, or cashew milk
  • 1½ cups frozen mix of mango, pineapple and kiwi chunks
  • ½ teaspoon freshly grated ginger
  • ½ lemon, juiced

Instructions

  1. Add the spinach and kale to a blender with the Almond Breeze and blend well.
  2. Add the frozen fruit, ginger and lemon and blend until smooth. If the smoothie is too thick, add more almond milk 1 tablespoon at a time.
  3. ** If using fresh fruit instead of frozen, reduce the almond milk amount to 1 cup and slowly add more to make your preferred thickness. Or, add 3-4 ice cubes before blending.
